Hey Chuck,

Those are beautiful pictures. Sadly my experience is mostly limited to the US and California but looking at those pictures makes me want to book a trip to Paris right now.

Hello Chuck,

I've been there for lunch today... and it was just fantastic. Have followed your advices (mixing "à la carte dishes", "signature"), some dishes being served one per person, others one for 2, and together with my wife, we experienced one of our best meal ever !

Next one now : Troisgros this sunday evening :)

Cheers

Roberto - certainly agree about the tasting menus and the need for narratives, etc. However, I will say Pierre Gagnaire is a tasting-menu restaurant - my first meal there was pitch perfect, course after course, building, sustaining, and gently landing. (That said, I have never ordered a la carte there...)

Chuck I love it because you hardly ever remember prices :))))))). This looks highly impressve from a Chromatographical point of view.
I agree with Julot that for a tasting menu to be impressive it really has to be masterly prepared and designed. Places like El Bulli or the Fat Duck are tasting menu restaurants because you don't eat, you are transported into the chef's vision of gastronomy.
I'm not too sure if in restaurants like Les Ambassadeurs, Pierre Gagnaire and so on having tasting menus has much sense, unless it's something particular like the truffle menu.
